Toki Shirazu. Translates to a salmon that ‘does not know time’. A rare salmon from Hokkaido that does not sexually mature and instead lingers in the oceans getting fatty rather than going up rivers to spawn. As in when it’s time to go do the deed, it doesn’t, as if it were unaware of time. 😅 A fish that I was not bringing in before.

Rare fish like this with near mythical status can sometimes be underwhelming, especially given the exorbitant price tag. And often I find rare fish with special branding to be more of a marketing ploy than anything... This one actually lives up to the hype. 😁
