The gizzard shad is a small fish related to the herring. A traditional edomae sushi, the name of the fish changes depending on the age. Baby gizzard shards are known as shinko, whilst the more mature ones are called Kohada. A fully grown gizzard shard is known as nakazumi and konoshiro.

Season : available year round, best in the fall and winter months.

Shinko (young kohada) is available in the spring and early summer
